Stromboli and Chocolate Cheesecake




My big brother made a stromboli for dinner the other night. He used a pizza crust mix, rolled it out flat (following package directions to mix) and topped it like a pizza, but then he rolled it into a roll and put it seam down on a cookie sheet to bake it at 350 degrees for about 20 minutes. We used beef and cheese as the filling, but you could use whatever you want.For dessert, he made an "Easy Chocolate Cheesecake" which my mom will tell you how to make:

Crust: crush 8 chocolate graham crackers and then mix them with 1/4 C. melted butter. Push the mixture into a pie pan, and bake at 350 degrees for about 5 minutes to firm. Meanwhile, beat 1 package cream cheese, 4 Tbs. cocoa, 1/4 C. softened butter, and 1 tub of whipped topping until smooth. Pour it into the cooled crust and refrigerate for about an hour before serving.

Spaghetti with Meatballs

Tonight's menu: Spaghetti with vodka sauce and meatballs, salad with ranch dressing, garlic crescent rolls and cherry crisp for dessert.

How to make it:
  1. start to boil water for the noodles
  2. pour a jar of pasta sauce in a pan, turn heat on low
  3. add 1 pound of frozen meatballs to the sauce, and stir every minute until the meatballs are hot
  4. then bake garlic bread using a can of crescent rolls sprinkled with parsley and garlic powder before baking them
  5. by now the water is boiling, so add the noodles
  6. stir until soft then drain
  7. by then your garlic bread is done, so take it out of the oven
  8. serve the meal with a bag of salad and ranch dressing (get your mom or brother to set the table for you)
For dessert you can make cherry crisp:
  1. add a can of cherry filling to a baking dish
  2. mix 1/4 cup butter with 1/2 cup sugar 1/2 cup flour until crumbly
  3. sprinkle the topping over cherries and bake for 15 min. at 350 degrees F.
Notes from Mom:

We used our favorite brand of jarred Vodka sauce, pre-made meatballs, whole-wheat pasta noodles and low-fat crescent rolls (follow package directions for baking). To dress this meal up, you could make your sauce, meatballs, and/or bread from scratch, or even add some fresh veggies to your bag of salad.
